These may not look like much, but when I made this, I was pregnant and craving Doritos chips. Instead of buying into the urge, I made this as an alternative and let me tell you, it hit the spot.
My 4 year old also couldnโt get enough!
This dish is a combo of a few recipes I found online, for example someone seasoned baked chickpeas for another Dorito alternative, then I combined that flavor profile with an Asian veggie pancake form, known as Okonomiyaki.
Instead of using flour though, this recipe uses cheese and egg to hold the veggies together. The cheese and lack of flour gives these the perfect crispness I was craving.
Healthy Waffle Recipe
Ingredients
- Shredded salad mix of your choice. My favorites include shredded broccoli, cabbage and carrots and even kale!
- Two eggs
- Shredded cheese such as cheddar
- Seasonings: garlic powder, sea salt, smoked paprika, nutritional yeast if you have on hand, and chili powder.
Directions
- Mix together seasoning of: garlic powder, sea salt, smoked paprika, nutritional yeast if you have on hand, and chili powder.
- Mix your choice of veggies, egg, and shredded cheese. I used pre-cut and cabbage, broccoli, and carrots.
- Add seasoning mix.
- Spray waffle maker. Cook until veggies no longer steam.
- Enjoy warm!
- Serve with applesauce or your favorite Okonomiyaki sauce, like this one (affiliate link). My friend Natsuko also adds oyster sauce on top along with the Okonomiyaki sauce.
