Liked by adults and kids! I’ve now made it for my lemon-loving one-year-old and a friend’s 40th birthday celebration!
I recommend the following cake mixes with homemade icing and mixed berry compote.

Lemon Buttercream Frosting
Ingredients:
- 1 cup butter
- 4 ½ cups powdered sugar depending on taste and preferred stiffness
- 1 tablespoon of vanilla extract
- 2-3 tablespoons of fresh lemon juice
- Teaspoon lemon paste
- 2 tablespoons of heavy cream (or oat milk)
- 2 teaspoons of lemon zest
- Couple pinches of sea salt to taste
1. Beat butter until creamy.
2. Add lemon juice, zest, lemon paste and powdered sugar together. Add in vanilla, a pinch of salt and heavy whipping cream.
If you wanted, you could also add yellow food coloring to the icing at this time.

Berry Compote
- 4 cups frozen mixed berries
- 1 cup water
- 5 tablespoons corn starch
- ¼ cup coconut sugar
- ¼ cup raw sugar
- 3 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- Pinch of salt to taste


Whipped Cream (Optional)
Ingredients:
- Heavy whipping cream
- Tablespoon or two of vanilla extract
- ¼ cup confectioners sugar
- Make whip cream by beating heavy whipping cream until fluffy. Mix in vanilla extract and confectioners sugar.
- Pipe into cake as decoration or use as an additional garnish after cutting.
