Liked by adults and kids! I’ve now made it for my lemon-loving one-year-old and a friend’s 40th birthday celebration!

I recommend the following cake mixes with homemade icing and mixed berry compote.

These cake mixes can be found at a Kroger near you! The vanilla is surprisingly spongy and delicious.

Lemon Buttercream Frosting

Ingredients:

  • 1 cup butter
  • 4 ½ cups powdered sugar depending on taste and preferred stiffness
  • 1 tablespoon of vanilla extract
  • 2-3 tablespoons of fresh lemon juice
  • Teaspoon lemon paste
  • 2 tablespoons of heavy cream (or oat milk)
  • 2 teaspoons of lemon zest
  • Couple pinches of sea salt to taste

1. Beat butter until creamy.

2. Add lemon juice, zest, lemon paste and powdered sugar together. Add in vanilla, a pinch of salt and heavy whipping cream.

If you wanted, you could also add yellow food coloring to the icing at this time.

Lemon paste adds extra sour oomph without thinning the icing which can happen with lemon juice.

Berry Compote

  • 4 cups frozen mixed berries
  • 1 cup water
  • 5 tablespoons corn starch
  • ¼ cup coconut sugar
  • ¼ cup raw sugar
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • Pinch of salt to taste
This is enough for two layers and a some extra spoonfuls on each slice.

Whipped Cream (Optional)

Ingredients:

  • Heavy whipping cream
  • Tablespoon or two of vanilla extract
  • ¼ cup confectioners sugar

  1. Make whip cream by beating heavy whipping cream until fluffy. Mix in vanilla extract and confectioners sugar.
  2. Pipe into cake as decoration or use as an additional garnish after cutting.
